Lobster Potpie


This recipe is amazing!!!

Lobster Potpie


  • Ingredients


    For The Filling

    • 4 tablespoons unsalted butter
    • 1/2 medium onion, chopped
    • 1 fennel bulb (8 ounces), halved, cored, and very thinly sliced, preferably on a mandoline
    • 1/4 cup all-purpose flour
    • 2 cups fish stock
    • 1/2 cup water
    • 1 pound cooked lobster meat (from 2 lobsters), cut into 1-inch pieces
    • 3/4 cup fresh shelled or frozen English peas
    • 3 tablespoons heavy cream
    • 1 tablespoon fresh tarragon
    • Coarse salt and freshly ground pepper
  • For The Topping

    • 4 tablespoons unsalted butter
    • 6 slices Pullman bread (1/2 inch thick)

Directions

  1. Preheat oven to 375 degrees. Make the filling: Melt butter in a large pot over medium heat. Cook onion until translucent, about 7 minutes. Add fennel, and cook until softened, about 7 minutes. Stir in flour. Add stock and water. Bring to a simmer.
  2. Remove from heat, and stir in lobster, peas, cream, and tarragon. Season with salt and pepper if needed. Let cool. Transfer mixture to a 9-by-12-inch (8-cup) gratin dish.
  3. Make the topping: Melt butter, and brush over bread slices. Tear each slice in half, and arrange over top of filling to cover the surface, overlapping as you work. Bake until bread is golden brown and filling is bubbling, about 30 minutes.


HINT: 
I got my lobsters at Costco
(they are good quality at a cost effective price!)

Stir cucumber into laughing cow cheese spread on tortillas, layer with turkey slices and roll up...perfect lunch from Rachel Ray

Ingredients

  • 1/4 cup chopped cucumber
  • tablespoons softened cream cheese
  • large flour tortillas
  • 1/4 pound sliced smoked turkey breast


Directions

  • Stir cucumber into cream cheese, 
  • spread on tortillas, 
  • layer with turkey slices 
  • and roll up.




Thai Roast Beef Wrap

Thai Roast Beef Wrap

Ingredients

  • Dash soy sauce
  • Creamy peanut butter
  • Coleslaw mix
  • Rice vinegar
  • Pinch sugar
  • Large whole wheat wrap
  • Sliced roast beef
  • Salt
  • Cilantro leaves

Directions

  • Stir a soy sauce and a little 
  • water into peanut butter. 
  • Toss coleslaw with rice vinegar and sugar. 
  • Spread the peanut butter mixture on whole 
  • wheat wrap and top with roast beef, a 
  • sprinkle of salt, coleslaw and cilantro. 
  • Wrap it up.

Coconut Lemon Pancakes

Pancakes

from a yummy little blog...

Basic Baking Mix ~ use enough to make around 8 pancakes

1/2 tsp lemon extract
1/2 tsp coconut extract
1/4 cup shredded coconut (optional)
1/2 cup powdered sugar
3-4 TBS milk

Prepare pancake mix, and add lemon and coconut extract. 

Cook pancakes.

Instead of maple syrup, mix powdered sugar and milk to create a thin glaze. 

Drizzle over warm pancakes

Yummy Ham Sammies

Happy Father's Day 
to all the Dad's out there,
especially mine!

With Dad's in mind, 
I am sharing this very 
Dad friendly treat
from Leah Beyer at 


Ham Sandwich on Hawaiian Sweet Roll

Leah provided an awesome pictorial "how to" to recreate this dish yourself, which I shared below.

Onion Half
+
Mincing onions with Pampered Chef Chopper
=

Minced onion 

+

Melting Butter

=

onions sauting in butter

+ add 2 tablespoons Dijon Mustard
Mustard in onions and butter

Then add 2 teaspoons Worcestershire
Onions with worcestershire sauce

Last, add 3 teaspoons of poppy seeds, 
simmer until onions are soft.

Then...

King's Hawaiian Sweet Rolls

rolls cut in half

Place bottom half of rolls in a foil lined 9x13 pan, spread 3/4 of mixture onto 
bottom half of rolls...
onion mixture spread on rolls

+ layer about a hald pound of shaved ham
+ 6-8 sliced of swiss cheese...
cheese layer

Place tops of rolls onto sandwich & spread the last 1/4 mixture on top...
onions and butter spread over ham sammies

Cover with foil & bake at 350 for 20 minutes.

Green Goddess Grilled Cheese

This is ah-mazing!

Grilled Cheese

Ingredients

2 slices bread 
2-3 tablespoons Green Goddess Herb Pesto ***
2 slices mild white melty cheese like mozzarella
handful fresh baby spinach
¼ avocado, sliced
2 tablespoons goat cheese, crumbled
olive oil and or butter 

Directions

Spread about 1 tablespoon of Green Goddess Herb Pesto onto each slice of bread (approx. 2 tablespoons total, the pesto is STRONG, so slather accordingly).
On one slice of bread, add 1 slice of cheese, sliced avocado, crumbled goat cheese, spinach, second slice of cheese, then top it with second slice of bread. Press together gently.
Heat 1 tablespoon olive oil in a frying pan over medium low heat. Or spread a think layer of butter on your bread). Add the sandwich to the pan and cook until bread is golden brown. Press down on the sandwich lightly, then flip the sandwich over and cook until second side is golden brown.
