Sloppy Joe's

I've been on the hunt for a good homemade Sloppy Joe recipe & I think I've found a winner!

I think this recipe is particularly good because of the smoked paprika 
(but that's just my opinion :o)

Regardless, these are a real crowd please for the kids & super easy to have in a crock pot at family friendly parties.


Easy Sloppy Joes

(by Reeni)

1 yellow onion, diced
1 green bell pepper, diced
olive oil, for sauteing
1 + 1/4 pounds ground beef or turkey
1 + 1/3 cups ketchup (like Hunts no high fructose corn syrup)
2 tablespoons white vinegar
1 heaping tablespoon brown sugar
1 teaspoon chile powder
1 teaspoon smoked paprika
1 teaspoon salt
1/4 teaspoon black pepper
2/3 cup water
sandwich or hamburger rolls for serving

1. In a large skillet saute onion and pepper over medium-low heat until tender. Remove from skillet and brown beef over medium heat. Drain grease.

2. Add sauteed vegetables back in along with ketchup, vinegar, brown sugar, spices, salt, pepper and water. Bring to a simmer and cook about 20 minutes or until water is absorbed, stirring often. 

3. Serve on toasted rolls. 

Serves 4-5.

Sloppy Joe's are just for kids, right?
Not so!

Breakfast Casserole

You gotta try this delicious 
Breakfast Casserole
this weekend!

Breakfast Casserole
By Martha McMullin

In a large bowl mix together:
1 small can chopped green chilis
1 large 32 oz bag of shredded hashbrowns
1 Tablespoon dried onion
1 medium container (16 ounces) cottage cheese 
2 cups grated chedder cheese
2 cups cubed ham, cooked bacon, or sausage (pick you favorite, we like sausage)

Beat:
12 eggs

Preaheat oven to 350 degrees. Combine everything but the eggs in a large bowl and pour mixture into a greased 9x13 pan. (Note: use a little less than the full 32 oz.'s of hash brown)

Beat eggs and pour over the mixture. Mix well. Bake at 350 uncovered for 1 hour or until set and slightly brown on top. 

*This can also be made ahead and frozen (raw) and brought out for guests. When frozen cook for 1 1/2 to 2 hours. 1st hour covered 2nd hour uncovered.

Pudding Cups!

Does anyone else want to 
try this as much as I do???
Well I did & it was 
just too much fun...
enjoy!

Pudding Cups
Here's the pictorial 
step by step instructions... 

Start with water balloons, blown up, 
washed & dried completely.

Drop a spoonful of melted (not too hot) chocolate onto 
wax paper. This will be the "base" of your cup...

Spray balloon lightly with nonstick cooking spray & DIP!

Dip about 1/2 way up balloon & let excess chocolate drain off...

 Place ballon on top of the chocolate base,
 and repeat, repeat, repeat!

Place full tray into fridge to speed up the hardening process...

Once hardened, "POP" the balloons....

Remove excess balloon debris...

Fill cups with chocolate pudding...

Add whipped cream...

and sprinkles (of course!)...
